Oatmeal spices up his life with chocolate ;)
Last night, page 314 of the King Arthur Flour Whole Grain Baking cookbook became a good friend of ours. We were feeling like something sweet (i.e. chocolatey) after dinner, and didn’t want to spend the rest of the night cooking.
King Arthur to the rescue! Below is a variation of the recipe list on the page above. The changes that I’ve made include allspice, chocolate chips. Originally recipe called for dried fruit and nuts, but N. and I weren’t having any of that.
I’m calling these Chewy Chocolate Chip Oatmeal Spiced Cookies:
3/4 cup unsalted butter
1-1/4 cup packed light or dark brown sugar
3 tablespoons dark corn syrup (didn’t have any, used light; worked great!)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 tablespoon cider vinegar
1 tablespoon vanilla extract
1 large egg
1-1/3 cups old fashioned rolled oats
1-1/4 cups traditional whole wheat flour
2 cups chocolate chips
Oven 350 deg F.
Cream butter, sugar, corn syrup, baking soda, baking powder, salt, spices, vinegar and vanilla. Beat in the egg. Add the oats, flour, chocolate chips, and stir to combine. Drop dough by heaping tablespoonfuls onto prepared baking sheets.
Bake, switching pans (top to bottom – bottom to top) halfway through. they should start to brown around the edges, but still be soft in the center – about 14 mins.
